Crispy Patatim
Patatim is a popular Tsinoy dish. Similar to Humba, it is typically braised so the meat is tender and the pork skin is gelatinous. It is often accompanied with bok choy and shiitake mushrooms. Our interpretation is cooking it in the style of crispy pata and serving it with the sweet soy glaze flavored with star anise and other spices and pickling the boy choy to balance out the richness of the pork and sauce. To make it more fun, we are serving it with steam buns rather than with rice.
