Pre-colonial forbidden rice porridge, topped with fried garlic, scallion, century egg, and maitake mushroom. Asin tibuok adds a smoky saltiness to finish.

Ingredients: Century Egg, Scallion, Maitake Mushroom, Fried Garlic, Asin Tibuok (Option: Vegan without Century Egg)

Serving Size: 2-3 people

After my dad passed away, it became a comfort food for me as I was grappling with my identity of being a mixed Chinese-Filipino Fil-Am, it was hard for me to wrap my head around the foods that my peers would be eating vs what I would be eating. It was comforting to me that no matter where we went, whether it be a Chinese or Vietnamese restaurant, my Lola would order Lugaw or one of its similar dishes like Congee.”
