Diok Pit He
Inspired by the Five-Jeweled Stuffed Shrimp recipe shared by our food historian Tita Felice. A modern interpretation, Diok Pit He, has Hokkien roots and is found almost exclusively in Manila. Typically, shrimp is stuffed with pork and seasonings and is either wrapped in caul fat or soybean wrapper. It is also very similar to the dish known as Kikiam [Tagalog: keek-YAHM]. Our version wraps the stuffed shrimp in soybean wrap and the pork stuffing is seasoned with Chinese Five Spice.
